Corn Muffins


I love cookbooks, and when I peruse the 641s here at the library, it’s often the beautifully photographed books with fancy techniques and ingredients I’m going to have to shop at specialty stores for that catch my eye. True confession: Many of those books get checked back in without ever having a recipe made. Oh well.  When it comes to the day in and day out of cooking, I usually go for the tried and true recipes–the kind of thing you’d get from one of the ladies at church. They are the recipes that are simple, good, and if you have a well-stocked kitchen, you’ll have the ingredients on hand.  That’s the kind of recipe you’ll find in the Church Supper Cookbook (641..5973 J57).  It’s simple, straightforward family food from actual church ladies from cover to cover.  I needed something for breakfast yesterday, and I whipped up a batch of these corn muffins. Delicious with a little butter and honey, and a snap to make.

Corn Muffins

¼ c oil

1 ¼ c milk

1 egg

1 c yellow cornmeal

3 t baking powder

½ t salt

1 ¼ c sifted flour

Blend oil, milk, egg, and honey into cornmeal, baking powder, salt, and flour. Do not over mix. Bake in greased muffin pans at 425 for 12-15 minutes. Makes 12 muffins.
